The vineyard soil is composed of gravels
on hilltops, clay on hillsides and silts downhill. These various
types of soil each produce specific wines with individual characteristics
: strengh from the gravels, aromas from the clays and delicacy from
the silts. The North to South plantation axis provides the grapes
with maximum sun light all day long.

The age of the vineyard is a guaranty
for producing high quality wines. Indeed, old vine heads produce
less grapes than young ones, but they are far more concentrated in sugar
and aromas. Moreover, the botrytis cinerea bacterium develops better on
grapes that are not too close to each other.
